I’m not sure how or where I first heard of cauliflower rice, but having heard about it we just had to try it. With Louise on fit fighting mission and myself just trying to be healthy, we are always on the lookout for new good food. We already have a fairly varied and healthy diet, although there is always room for more recipes and options. I’ve never really been a massive rice fan so the idea of a replacement did quite appeal to me and I do like cauliflower so to me it sounded pretty good.

What really appealed to me was the simplicity of it and the time it takes to make, less than cooking rice. In its simplest for all you have to do is blitz some cauliflower in a blender and then steam the pulverised cauliflower for a few minutes. It is better if some flavours are introduced, these can be simple salt and pepper or even curry spices. I would have like to use some fresh coriander however we didn’t have any as this along with basil is one of the herbs that just don’t survive in our house for some unknown reason, anything else is fine we have quite a selection of fresh herbs in the garden, just not coriander or basil.

We had this for the first time with a home made curry, it really does work well as an alternative to rice, it has a very similar texture and if you have a good sauce with the curry it does really soak up the flavours. I even had this the other day with leftover takeaway curry, I’m not sure if it makes that any less naughty or not, it really did work well taking the heat out of the rather hot chicken madras I had from our local curry house. I also think it would go really well with a stir fry or another dish with a good sauce.

Cauliflower Rice

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 1/2 a head of cauliflower
  • Flavourings of your choice, herbs, spices, lemon juice etc.

Instructions

  1. Cut the cauliflower in to florets and in batches blitz them in a blender (if you don't have a blender you can use a grater)
  2. Mix in any herbs, spices or other flavourings
  3. Steam for 5 minutes alternatively microwave for 3 minutes with no added water.

    I love cauliflower rice – I think it’s a great low-carb alternative for rice. What I don’t love is how horrible it smells… but it’s a small discomfort for something that cooks in minutes!
