Coronation Chicken
This is a quick simple dish that can form part of a meal, and sandwich filling, a side dish, or can be adapted to make a potato salad. This is something we quite often have as an accompaniment to a jacket potato as it easy to make and you can bake the chicken in the oven whilst the potatoes are cooking and have time to allow the chicken to cool while the potatoes finish baking. The dressing also makes a great potato salad just add in a few chopped chives.

I love this, it’s one of my favourite low propoint recipes and go-to quick suppers!
I have never tried making these but had it in sandwiches before. It looks lovely
I like your recipe a lot, it’s so straight forward. I think it’s an ideal lunch choice.
Very simple and easy to prepare! And the dressing does remind me of a potato salad dressing with a wonderful spice from the curry…
