Normally when we have toad in the hole it is with full size sausages all in one big pan. Having some chipolatas leftover in the fridge I thought it would be a little different to make individual toad in the holes using chipolatas in a muffin tin. Although it turned out they are not quite bite size they work well.

Mini Toad in the hole
Toad in the hole recipe made in a muffin tin to give individual servings.

Ingredients
- 140g flour
- 4 eggs
- 200ml milk
- 4 chipolta sausages
- 6 mushrooms
- ½ onion
Instructions
- Pre heat oven to 230 degrees
- Add a little rapeseed oil to each hole of a 12 hole muffin tin and put int he oven to heat up
- Cook the sausages
- Beat the egg, flour and milk together, until you have a smooth batter
- Chop the cooked sausages, oinion and mushrooms and divide between the muffin tin holes
- Divide the batter between the holes
- Bake for 20-25 minutes until golden brown
