This is my quick and healthy stir fry vegetables with rice.
- 1 onion
- 1 clove of garlic
- 1 pepper
- bean sprouts
- 80 g brown rice
- 120 ml water
- 1 1/2 tsp cornflour
- 2 tbsp chilli sauce
- 1/2 tsp honey
- Put the rice on to boil, while the rice is simmering, prepare the vegetables. Finely chop the garlic, and slice all the other vegetables into strips and slices.
- Heat 1/2 tsp rapeseed oil in a wok or frying pan add the garlic and onion, fry until this has started to soften and take some colour then add in the pepper and carrot, followed by the mushrooms.
- Let these cook through, whilst the main vegetables are cooking whisk the water, cornflour, honey and chilli sauce together, then add in the bean sprouts and broccoli to the vegetables, cook for a couple more minutes.
- Then add in the sauce and warm though / thicken, check the rice is cooked then serve.
