Making use of the Strawberry glut

What do you do when your garden will only grow vast quantities of strawberries? There’s a point when you just can’t eat enough before they start to spoil, strawberries and cream, strawberries and ice-cream, strawberries starts to turn into a Monty Python sketch. So I have been trying to find ways of using the strawberries before they spoil and so that they can be preserved somehow. I’d started with strawberry syrup to flavour milkshakes and protein shakes, but even that only made a small dent in the strawberry mountain.

I’d been watching one of the many for programs on the old television, when strawberry jam popped up. This wasn’t a jam that would last for years, just one with a small amount of sugar added to make a jam that would only last a short while. Given that jam in our ouse lasts days rather than months this sounded like a good idea. Given that the jam didn’t need to last more than a week or two a simple jam with only a little added sugar that kept the natural flavour of the strawberries would be perfect.

Once you have made the jam you need a jam delivery system from the staple bread and ja, maybe a nice scone, croissants or maybe even rice pudding.

Recipe

Ingredients

  • 1kg Strawberries hulled
  • 150g sugar

Method

  • Mush the Strawberries and sugar to gather in a large saucepan
  • Bring to the boil and simmer for 10 minutes
  • Skim any foam from the top
  • Pour into sterilised jars and seal
