Beef and Mushroom Stroganoff
This beef stroganoff was a result of freezer roulette, where some meat is picked at random from the freezer and then a meal is created from that and whatever else is available in the cupboard and fridge. This worked out really well, was easy to make and tasted really good. It doesn’t take long to make and goes well with a number of accompaniments, we had it with jacket potato but it would work really well with tagliatelle or rice. This simple dish makes a great quick mid week meal or you could even a hearty Sunday lunch.

A perfect winter dish popping by from recipe of the week
A tasty looking dish.
These are the kinds of meals I love – a whatever’s lying about just gets transformed into something warm and comforting! This looks so good…
Love the term “Freezer roulette”…
Tht sounds likemy kind ofdish – fast, easy and good. One question, though – when do you addd the tomato? With the stock?
The tomato gets added with the stock, I’ve updated the recipe to correct that slight oversight 🙂
That looks perfect and sounds delicious. Thanks for linking up with #recipeoftheweek. I’ve pinned and tweeted this post, and there’s a fresh linky live now for this week. I would love you to pop over and join in 🙂 x
This was perfect for supper really tasty and low WW points for me. Can we have it again soon please? x.
How did you calculate the WW points? I used the WW recipe builder and calculated 14 for the whole recipe, so I don’t understand how you got 4.
The points are calculated using the weight watchers app, that’s with extra lean 5% mince and without rice or potato. It’s per serving as well so the total for the recipe is 8 + rice or potato.
OK, thanks for explaining that. I calculated for ordinary stewing beef, so probably more points than extra lean. I also wasn’t sure if the points were per serving, or for the whole recipe, so you have cleared that point up too. Thanks.
Ahhh comfort food at its best. Love this brings back memories of my mum making it! Thanks for linking to #CookBlogShare and waving the flag for savoury recipes.
