Beef and Mushroom Stroganoff

This beef stroganoff was a result of freezer roulette, where some meat is picked at random from the freezer and then a meal is created from that and whatever else is available in the cupboard and fridge. This worked out really well, was easy to make and tasted really good. It doesn’t take long to make and goes well with a number of accompaniments, we had it with jacket potato but it would work really well with tagliatelle or rice. This simple dish makes a great quick mid week meal or you could even a hearty Sunday lunch.

Beef and Mushroom Strogenoff

Beef and Mushroom Stroganoff
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 tsp rapeseed oil
  • 200 g beef diced
  • 1 onion finely chopped
  • 1 clove garlic finely chopped
  • 1 tbsp wine
  • 250 ml stock
  • 1 tsp Worcestershire sauce
  • 1 tbsp flour
  • 1 tbsp tomato puree
  • 6 mushrooms sliced

Instructions

  1. Heat the oil in a large pan
  2. Toss the diced beef in the flour and some black pepper
  3. Fry the beef, onion and garlic
  4. Add in the mushrooms and fry for a further 5 minutes
  5. Add the wine, Worcestershire sauce, tomato puree and stock
  6. Bring to the boil and simmer until the sauce has reduced

    Tht sounds likemy kind ofdish – fast, easy and good. One question, though – when do you addd the tomato? With the stock?

    1. The tomato gets added with the stock, I’ve updated the recipe to correct that slight oversight 🙂

  4. How did you calculate the WW points? I used the WW recipe builder and calculated 14 for the whole recipe, so I don’t understand how you got 4.

    1. The points are calculated using the weight watchers app, that’s with extra lean 5% mince and without rice or potato. It’s per serving as well so the total for the recipe is 8 + rice or potato.

      1. OK, thanks for explaining that. I calculated for ordinary stewing beef, so probably more points than extra lean. I also wasn’t sure if the points were per serving, or for the whole recipe, so you have cleared that point up too. Thanks.
