Taste infusions, flavoured oils
For the last couple of years we have been growing chillies on our kitchen windowsill very successfully. The plant that was purchased from waitrose for a couple of pounds has been producing more chillies than we have been able to cook with. There potent little things so you don’t need a lot to provide a hit, so we have had an excess that we’ve dried and been keeping. Now we had some bottle left over from a Christmas project of Louise’s that I thought would be ideal to make infused oils in.
Apart from the chillies that were an obvious choice to turn into an oil I had a look round to see what else would produce a nice oil, I came up with Basil and Garlic, I had three of the little bottles. Making the oils is really simple just add whatever you want to flavour the oil with to a bottle fill with oil and leave to infuse. You can either strain the oil after a couple of weeks or just leave it in, which I prefer as it makes them look nice and identifiable at a glance.
The only thing that must be done with some care is sterilising and drying the bottles and ingredients, as this is a source of contamination which will spoil the oil. I have plans to make further oils, but as the only bottles I had left were 1L ones I wanted to ensure that the process work well before going all in. The bottles are available in various sizes from many places including Amazon, IKEA etc…

Ingredients
- Olive oil
- Chilli
- Garlic
- Basil
Instructions
- Wash and thoroughly dry all the ingredients
- Add the Garlic / Chilli / Basil to a bottle
- Fill with olive oil

The bottles were originally for a Christmas present project, but arrived too late so I pressed them into use for this. If your just doing for yourself could make life easy and just add flavourings to oil in the bottle it comes in.
